Slow Cooker Creamy Chicken Chili

If you’re looking for slow cooker dinner recipes to feed even your picky eaters, this creamy chicken chili is made with simple ingredients and is always a hit! It’s perfect for busy week night meals or anytime you want something easy and delicious to eat.

You simply dump a few chicken breasts, chicken broth, a block of cream cheese, ranch seasoning mix, chili powder, cumin, garlic powder, cheddar cheese, canned tomatoes, beans and corn into a crockpot, set it on low for about 6 hours, and BAM! The BEST family dinner recipe, ever.

Serve it alone or top it with tortilla chips, avocado, cilantro, jalapeño or anything else you’d like. It’s just as good leftover, so my family of 4 gets at least two meals out of this recipe. That’s always a bonus!

Let’s get started, shall we? Place all of the ingredients except for the cheddar cheese into your slow cooker and mix well.



It should look something like this. Use a spoon to break up the cream cheese so that it melts a little easier.

Cover and cook on LOW for about 6 hours or until the chicken shreds easily and the cream cheese is well incorporated.

Remove the chicken breasts and use a couple of forks to shred it apart. Place it back into your slow cooker with about one cup of cheddar cheese and mix well. Allow the chicken to absorb the spices and juices for an additional 15-30 minutes or until you’re ready to eat.

Serve alone or with tortilla chips, Fritos, avocado, extra cheddar, cilantro, jalapeño or anything else you think would be tasty on there.

Instructions

1. 
   
   Place everything into your slow cooker except for the cheddar cheese.

Recipe Notes

• Feel free to use the beans of choice or whatever you happen to have on hand (black beans, white beans, chili beans or kidney beans).


• This recipe is very family friendly and shouldn't be too spicy or salty, but you can also add in a little cayenne, onion powder or anything else to suit your taste.
